The Shiitake mushroom (Japanese) - also known scientifically as Lentinula edodes - has been a staple of Chinese, Japanese, and many other East Asian countries’ cuisine for many centuries, and is probably the second most cultivated edible mushroom. Hundreds and maybe thousands of years ago, the ancient Chinese religion (and also Vietnamese) believed that Shiitake mushrooms were a gift to the Earth from the mythological sage-healer/hero/ruler/God Sheonnong, who was closely linked to farmers and other land workers (Sheonnong translates to “Divine/God Farmer” or “Divine Husbandman”); Sheonnong is thought to have taught the Chinese how to practice agriculture, acupuncture, and - crucially - the application of plant-based medicine and the use of herbal drugs.

Shiitake mushrooms:

HOW?
